The Story of Mustard

some image

Mustard is a labour of love by Shilpa Sharma and Poonam Singh who, after dynamic careers in retail and hospitality, decided to explore their shared passion for unique culinary experiences.

Inspired by the use of mustard in its purest forms by both Bengali and French cuisine, we have brought together the best of the gourmet West and the feast of the East, thus also introducing for the first time to connoisseurs the culinary culture of a once-undivided Bengal.

Mustard is not fusion. We haven’t deviated from our commitment of telling traditional stories from the rich cuisines of Bengal and France. The two meet, not in fusion, but in flavours that you will savour over untold stories.

Experience the magic of Mustard – carefully curated heirloom recipes that state their legacies on a plate.

The Story of Mustard

Bengali and French Cuisine

Recipes may and do evolve, but core ingredients stay unchanged. Much the same way, Mustard has evolved from our debut in Goa, but the components that combined to create an experience that Goa took to heart still hold pride of place as we serve new flavours for Mumbai to savour.

Chefs

Pritha
Her forte is the regional foods of eastern India with a focus on Undivided Bengal which includes the region that became Bangladesh after the partition of India in 1947. Considered an authority on the subject, she has been described variously as a food ethnographer, food anthropologist and food historian, though she prefers to be known as a researcher and custodian of the indigenous wisdom of regional cuisines.

Greg
Chef extraordinaire, Gregory Bazire from historical Normandy in France has wrought his magic in European rustic chic.

He gave Goa the standard-setting Le Poisson Rouge and appetite-whetting Om Made Cafe and has now created the unique flavours that you can savour on our French menu.

The two meet, not in fusion, but in flavours that you will savour over hitherto untold stories that the dishes guard zealously.

Eevie
The cocktails on our menu, both Twisted and Signature, have been created and curated by Evgenya Prazdnik, a mixologist who shaken and stirred her way across the world for 14 years and lived in 5 other countries before calling India her home. She’s also crafted our sharing drink, shots, and mocktails and is the Indian winner of the Diplomatico World Tournament. She also placed in the Top 3 world best bartenders at the Global Bols Around The World Competition, Amsterdam.

Founders

Punam
An accomplished professional with over 30 years of experience in the hospitality and retail industry, Punam has been the abiding force behind Mustard Goa since its inception in 2015. She met friend and co-founder, Shilpa, during her thriving run in retail.

She is presently found putting the finishing flourishes to the soon-to-be launched Mustard in Mumbai. Her invaluable experience of over a decade in F&B at the Taj group of Hotels and over a decade in retail, along with excellent people management skills is matched in equal measure with an appreciation for fine food, beauty and detail. The charming Mustard décor is a manifestation of that aesthetic eye.

Her boundless energy she gets from her passion for running!

Shilpa
After an enriching spell in the corporate world in her three-decade long career, Shilpa exchanged the corner office with entrepreneurial dreams. She set up a retail advisory practice, and launched Breakaway; a bespoke travel enterprise specializing in Beyond the Brochure experiences, and then went on to co-found Jaypore, an online retail portal for exquisite handmade products.

Giving shape to another aspiration, Shilpa ventured into hospitality with Mustard, a delicious blend of her passion for food and exceptional experiences.

Remarkably, she also finds time for leisure travel, creative pursuits, and mentoring young women. Not least, actively seeking out that next best idea!
